Easy Shio (Salt Based) Ramen

Shio Ramen with Prawn (Salt based Broth Ramen)
Ingredients: for 2
For toppings:
150g prawns (16 pieces)
Marinade:
1 tbsp cooking wine
1/4 tsp of salt
white pepper
1 tsp oil
1 1/2 tsp corn flour
1 bok choy or puk choy
2 serving dry or fresh noodles
For the soup:
1 tbsp cooking oil
1 spring onion
4 thin slices ginger
1 tbsp cooking wine
600cc chicken stock
2/3 tsp salt
dash of white pepper
dash of sesame oil
For corn flour mixture:
1 tbsp corn flour and 2 tbsp water, mix
together
Method:
1. Combine cooking wine, salt, pepper, oil, cornflour in a bowl and marinate prawns.
Set aside.
2. Cut spring onion into batons and thinly cut ginger.
3. Combine 1 tbsp corn flour and 2 tbsp water. Set aside.
4. Cut bok choy in quarters and wash thoroughly. Cook in the salted boiling water
for a couple of minutes. Drain.
5. Prepare boiling water for cooking noodles.
6. Heat the wok, add 1 tbsp oil, add spring onion and ginger and fry for a couple of
minutes, then remove.
7. Add prawns into the wok and separate them out into a single layer, add the
cooking wine and cook for a couple of minutes. Add soup and heat up.
8. Cook noodles as per instructions.
9. When soup heats up, add salt, pepper and sesame oil. Adjust the seasoning.
Pour the prepared corn mixture and stir.
10. In a noodle bowl, place the noodles and pour the soup. Top with prawns and
bok choy.
Sprinkle a dash of sesame oil (optional).
Notes:
Infused oil with spring onion and ginger is the key of this soup.
You can make this Shio ramen with chashu and add eggs, bean sprouts, corn and
anything you like. Enjoy this delicacy, Ramen!
